Rolled ice cream, AKA stir-fried ice cream, is a fun dessert that’s hugely popular in Asian countries, especially Thailand. It is “made with milk poured on an iced grill, mixed with fruit or different ingredients on the ice-pan .” Source.

Over the last few years rolled ice cream has grown in popularity thanks to viral videos of vendors making the ice cream. It is exciting to watch an expert whipping up a batch of ice cream on the cold-plate.

A freezer plate allows you to make ice cream fast. But not everyone has one of these in their home. Actually, I don’t know anyone who owns one. They are quite expensive and are made for commercial use rather than making ice cream at home.

  DIY Rolled Ice Cream

Did you know you can make rolled ice cream at home?

You have two options.

1. You can use an ice cream pan which is a fantastic invention. You simply freeze the plate overnight then remove from the freezer and add your ice cream mixture to the plate. After a few minutes of mixing the ice cream, you’ll have rolled ice cream. Toss in add-ins like cookies or fruit before rolling the ice cream. It’s a simple, yet effective way to make rolled ice cream.

2. Add your ice cream mixture to a cookie tray and freeze it for half an hour before rolling it. This is another good option, however, using the ice cream pan will provide you with creamier, smoother ice cream.

Here’s how to make your own rolled ice cream without the ice cream pan

You can make rolled ice cream at home easily. The recipe below makes enough ice cream base for four different flavour variations. You may want to reduce this to suit your needs. Here’s what you’ll need.

  Homemade Ice Cream Rolls

Ingredients

  • 1 can condensed milk (395g or 14oz)
  • 2 cups cream
  • 2 Tbsp cocoa
  • 1 cup chocolate flakes

Method

  1. Add condensed milk, cream, and cocoa to a blender. Pulse a few times to combine. If you keep the blender running the cream will get too thick and it won’t pour as nicely (see our first attempt in the pic below). It still worked but it’s easier when you can pour it out.
  2. Pour or spread the ice cream in a thin layer into a shallow baking tray.
  3. Sprinkle chocolate flakes over the ice cream.
  4. Freeze for 30 minutes until it’s hardened.

Now roll it up!

Use a paint scraper. Definitely make sure it’s clean and hasn’t been used for actual paint.

Cut lines into the ice cream lengthwise. They should be the width of the scraper. Now scrape each length ice cream into a roll.

Serve the rolls in a tub or cup that’s a suitable size.

You can get creative with your flavours. Anything goes with this recipe – it’s fun to experiment.

  Rolled Ice Cream

Vanilla option

  • 1 can condensed milk (395g or 14oz)

  • 2 tsp vanilla

Strawberry option

  • 1 can condensed milk (395g or 14oz)
  • 2 cups cream
  • 2 tsp vanilla
  • 1 cup strawberries

Mango option

  • 1 can condensed milk (395g or 14oz)
  • 2 cups cream
  • 2 tsp vanilla
  • 1 cup mango

Mint option

  • 1 can condensed milk (395g or 14oz)
  • 2 cups cream
  • 1 tsp mint essence
  • Few drops of green colour (optional)
